We all like a good Gilda because they’re the perfect spit, but the truth is that right now they’re even in the soup: wherever you go, there’s a Gilda. That’s why today from El Comidista we bring you another perfect snack for the next appetizer at home that will surely surprise your guests: caramelized figs with anchovies and Gruyère.
Well, it’s not like we discovered America: figs with anchovies are a combination, I would say, quite old-fashioned, flavors of yesterday. However, this is a slightly modernized recipe, with caramelized sugar creating a crunchy layer and the cheese enhancing the combination of the sweetness of the fig with the saltiness and umami of the anchovy.
If the figs are ripe – which they should be for best results – it is likely that the caramel will not remain solid for too long, as the fig will release juice within a few minutes as the sugar is heated, softening it. So try serving them immediately after preparation. But be honest, if it softens, nothing will happen: the result is similar, and although the crunch is a good extra, it is not essential. You can make them with a blowtorch or in a pan, and the result will be good with both options.

Ingredients
For 2 people
- 6 figs
- 12 anchovies
- 12 pieces of Gruyère (about 100 grams in total)
- Sugar

Wash the figs, remove the top part (for another preparation, such as a fruit salad) and the peel from the bottom and cut the middle part into two slices.

Place the slices on a tray and sprinkle a layer of sugar over each. Caramelize the sugar with a blowtorch until it is amber in color.

Another option is to put small heaps of sugar in a non-stick pan and heat it over medium heat. Wait until slightly melted and then place the fig slices on each candy circle. Continue caramelizing until amber, then place on a plate, caramelized side up.

Place a slice of fig caramel side up, a piece of Gruyère and an anchovy on top and cover with another slice of fig caramel side up. Serve immediately.
