Maple syrup: “I’ve been in production for 30 days,” says a maple producer

Due to the mild periods in December and January, maple farmers have been harvesting maple sap in recent days, in the middle of winter.

“Some of my fittings are already in production,” said Julien Dupasquier, maple producer for “Érablement Bon!”

In an interview on LCN, the Montérégie-based entrepreneur took stock of the conditions the maple groves will face until spring.

The maple producer has been in production for 30 days and says it started the process earlier to better spread its activities.

“It’s a risk to start production earlier,” he admits.

“Everything I harvest, as long as I tap it, cook, cook and add up my yields to spread my production over 120 days from December to April.”
