Fulvio has been Creative Director of Food since its opening and has since taken care of most of the Rocco Forte Group's restaurants. At Verdura Resort Fulvio is for five restaurants responsibly and only the best ingredients are used in each. The particularity of Verdura is that most of the food comes from its own organically certified cultivation. Some even go directly on resort grounds harvested, such as olives for olive oil. Gault&Millau had the privilege of exploring the resort and the region on a four-day trip.

On our four-day trip we were accompanied by Fulvio to learn more about Sicilian products and understand that just a few ingredients it needs, to create delicious dishes. During a cooking course taught by Fulvio, which takes place in the “Casetta nell'Orto”, a small house near the old train station, we were able to prepare three dishes with Fulvio that use just a few ingredients. Most of them were harvested immediately before in a small garden. This garden was created to show visitors the great diversity that grows in Sicilian soil.
