We air Brussels sprouts, celery, cauliflower, oranges, lemon or leeks to make a pitcher of delicious and easy recipes. Because you already know that in this section there is a very clear rule: propose dishes prepared with products at the best time to eat them.
Monday, January 30th
FIRST: SAUTEED BRUSSELS SPRUITS WITH MUSTARD VINAIGRETTE
The trick to keeping those sprouts from smelling like our childhood dreams is to apply a little steam in the same pan instead of boiling them: garlic and vinegar will do the miracle.
SECOND: MILANESA NEAPOLITANA
Neither from Milan nor from Naples: This pizza-flavored breaded veal – including tomatoes, cheese and basil – comes from Argentina.

FIRST: ORANGE BATON
If you love the Antequera cousin of gazpacho and salmorejo, don’t rule out the possibility of making it with seasonal ingredients.
SECOND: PASTA WITH BROCCOLI, ALMONDS AND LEMON
If you’ve struggled with broccoli because it was overcooked when you were young, this recipe will have you making peace with it in no time: It’s cooked al dente and has the fresh addition of lemon.
DESSERT: SEASONAL FRUIT: KIWI
Kiwi is in season and is one of the fruits with the highest concentration of vitamin C. Ideal for colds.
Wednesday February 1st
FIRST: SOFT CELERY CREAM
To like one of the less popular vegetables you have to choose the part you want to cook well, use the right technique and accompany it with ingredients that enhance the best flavor.
SECOND: MAPO TOFU (SPICY TOFU)
The most popular recipe from the Chinese province of Sichuan has such a spicy and deep taste that it needs to be diluted with rice. It may also change the minds of those who think tofu tastes like nothing.
DESSERT: BOWL WITH LEMON AND MERENGUE CREAM
This “dessert jet” is a helping hand, a lifesaver when you have guests at home and don’t know which dessert to end the meal with. Simple, quick to make, inexpensive and with just a few ingredients: unbeatable.
Thursday February 2nd
FIRST: ROASTED CAULIFLOWER AND LEEKS WITH YOGURT SAUCE
We’re back to the oven as a tool to get flavorful, caramelized veggies without the extra calories. A yoghurt curry powder sauce rounds off a winning move from minute zero.
SECOND: COD WITH POTATOES, PISTACHIOS AND PISTACHIOS GREMOLATA
A juicy, well-rounded cod taco on a bed of tangy and golden veggies, with a green sauce to add a fresh twist: you haven’t died, but you’ll feel like you’re in heaven.
DESSERT: SEASONAL FRUIT: MANDARIN
Ok: The smell of tangerines is not so easy to wash off your fingers, but compared to its juiciness it is the lesser evil.
Friday February 3rd
FIRST: COCKLE CREAM FOR SPREADING
Anyone could say a priori that mixing cockles and cheese is characteristic of psychopaths. No, the result is a delicious cream that can be wonderfully spread on rolls.
SECOND: SAUCE BEANS WITH BUTTER AND PICKLED ONIONS
We chose a large legume and lightly roasted it in a pan with garlic, spices and butter. We serve this with aromatic rice with lemon onions for refreshment.
DESSERT: PUFFY BLINDS WITH BUTTERCREAM
If the Bilbao natives are born where they want, the blinds -100% Bilbao dessert- can also be adopted anywhere. Say no to this puff pastry wonder, sweet, honeyed and crunchy.
Saturday February 4th
MAIN DISH: SPINACH WITH BECHAMEL AND EGG MOLLET
The béchamel can turn the least favorite vegetable into the most attractive of all dishes: in our hands it is to cook the spinach to the point to keep the magic.
DESSERT: SEASONAL FRUIT: ORANGE
We’re sorry to tell you that oranges don’t cure colds, but they’re delicious nonetheless.
Sunday February 5th
MAIN DISH: CHICKEN WITH GARLIC, LEMON AND NORA
The chicken thigh is tender and juicy, and when boned and sliced, it cooks in minutes. With four other ingredients to give it flavor and aroma, we get a dish of 10.
DESSERT: TIRAMISU
Tiramisu is one of the easiest desserts to make, but there’s a big difference between mediocre and excellent. Travel with us to one of its temples and discover the keys not to fail.
