Here is the best cheese in Quebec!

For the fourth time, Zacharie Cloutier from the Nouvelle-France cheese dairy wins the Caseus Or, named “Quebec’s best cheese”.

What is special about this cheese?

According to Marie-Chantale Houde, co-owner of Fromagerie Nouvelle-France in Saint-Augustin-De-Desmaures, what’s special about Zacharie Cloutier is that “it’s made from sheep’s milk, so not cow’s or goat’s milk.”, and that’s in Quebec unusual.

“To make this cheese we buy milk from six other companies, mainly from the Estrie region.”

“It’s a solid, half-baked dough, it’s quite a challenge to prepare it and it’s a little more technologically difficult. In terms of flavors, it’s heavy on brioche, caramel, butter and macadamia nuts, and the longer it ages, the more it develops flavors of coconut, sweet and maple,” she explains.

“We never managed to meet the demand because the first time we won the Caseus Or was in 2011 and we had just created the Zacharie Cloutier,” she recalls.
