Algerian cuisine: When tradition comes back into fashion

The Kabyle pancake, also called “agroum” or “kessra” in Arabic, is the queen of the Algerian table.

Made from semolina, oil and water, golden brown and flat, it is cooked in a pan.

This pancake is eaten with Felfel, a cold salad made from grilled peppers, but also goes well with all sorts of other dishes. In Algeria you can even eat it for breakfast with butter, honey and a café au lait.

In this recipe the galette version is filled. Also very popular: simply add a mixture of onions, peppers, tomatoes, minced meat and parsley to the dough.

Algerian pancake: the basic recipe

The indicated ingredients are as follows: semolina, flour, a small glass of olive and sunflower oil, a little salt, lukewarm water and a small spoonful of brewer’s yeast.

The TikToker skillfully mixes each ingredient by hand and we see her quickly kneading the dough before dividing it into several small pieces of dough, which she shapes into balls.
