Ingredients
- 4 pork chops
- 45 ml (3 tbsp) hot mustard
- 30 ml (2 tbsp) soy sauce
- 8 shallots, halved
- 2 to 3 apples, peeled and cut into 8 pieces
- 60 ml (4 tbsp) butter
- 1 sprig of thyme
- 2 cloves of garlic, minced
- 125 ml (1/2 cup) apple cider or apple juice
- 90 ml (6 tbsp) chives, chopped
- Salt and pepper to taste
Preparation
Step 1
Preheat the oven (center rack) to 200°C (400°F).

Mix mustard and soy sauce in a bowl, brush over the pork chops and let marinate for a few minutes.

Meanwhile, in a hot pan, fry the shallots and apples in a little melted butter.
Step 4
Add the thyme sprig, garlic and apple cider and simmer over high heat for 4 to 5 minutes, covering the apples and shallots with the liquid. Check the seasonings.
Step 5
Then leave in the oven for 30 minutes, or until everything is golden brown and melted.
Step 6
Meanwhile, fry the chops in a very hot ribbed pan for 2 minutes on each side.
Step 7
Spread the apple-shallot mixture, the meat on the side and the chives on each plate.
