Butter for cooking spaghetti with mussels. And the storm breaks out. Hero? None other than Bruno Barbieri, the star chef who has been the face of Masterchef for years. In fact, he used butter to cream the spaghetti with clams. “Guys, how good is spaghetti with clams? With a sprinkle of breadcrumbs and a glass of white wine, they are perfect for parties. “This is how they do it,” the chef wrote. The use of breadcrumbs has also come under criticism.
Spaghetti with mussels, the description of the dish
“Spaghetti with mussels is the dish you can never miss,” says Barbieri in the video. “I also like small mussels, but today we're making the real ones.” We only prepare them in white, extra virgin olive oil and I always add a piece of butter at the end. I know the purists say 'no but', but I don't care.” “The mussels are opening,” the chef continues, “in the meantime, I'll get some bread.” Once they're open, you have to immediately remove the lid to stop cooking. I filter the sauce, put the mussels in and add some parmesan. How wonderful, let's look at the spaghetti as it is. You always have to be very careful, check whether the mussel water is too salty and add a little water if necessary. Then I take some parsley and chop it just like my grandmother did. The reactions
There were many reactions to the article published by Barbieri. Apart from a few curious people who are open to a new method of preparation, the majority have not forgiven the “paralysis” of the original recipe. “But proofing spaghetti instead of using butter to cream the dish seemed bad to me? “I'm open-minded and everyone puts what they want on their plate, but the butter destroys the delicate taste of the mussels,” writes one user. «Breadcrumbs and butter. Prepare agnolotti in broth and you’re done,” commented another follower. “I’m from the Carabinieri, I’m suing you” and “You bring them to me so I can send them back to the restaurant”. Finally we read succinctly: “I wonder how it is possible that you are a star chef.”
