You’ve probably noticed it while shopping All the boxes in the egg section compete in the imagination to seduce you You can see the chicken farmer’s photo, chickens that eat organic, that eat non-GMO, that are raised outdoors, with “good breeding practices”… What’s up?
For starters, what is an egg? This allows the chicken embryo to develop if that egg is fertilized, which is not the case with commercial eggs. If you want chicks, there must be a rooster. However, there are none on laying hen farms.
In the eggs you eat there is everything that will serve for the growth of a chicken embryo. Two-thirds of the yolk is made up of fatty substances, including cholesterol, proteins, vitamins… And the egg white contains a protein, albumin.
What are the differences between our free range, organic and conventional eggs?
There are almost none. All chickens eat more or less the same thing, mainly a mixture of grains, but most importantly, since the egg has a reproductive function at its base, the composition of the yolk is very stable. You will find small variations, but nothing that affects the nutritional value.
Eggs are often criticized for their richness cholesterol, which can be harmful to health. A study published in 2020 showed that moderate consumption of up to one egg per day does not affect consumers’ incidence of cardiovascular disease.
Why buy eggs from free range or organic chickens that are 2 to 3 times more expensive than the others?
The reason isn’t in the quality of the eggs you’re going to eat, but in the quality of life of the hens that lay them. Experts agree that chickens that are outside for several hours a day live happier lives than chickens that spend their entire lives in cages, where they live at 13 per square meter.
The egg price depends on it the quality of life of chickens. If you think chickens are worth it, then the price is justified. Either way, eggs are a source of animal protein with a much smaller carbon footprint than beef, lamb or even pork.
