The name Hakim Chajar is well known in the Quebec dining scene. A finalist of the show “Les Chefs” in 2012 and winner of the version “La revenge” in 2014, he trained in some of the most popular restaurants in the world.
“My mother gave me the love of cooking. She had the courage to show us the basics. When I didn’t want the offered food on the table, I dug into the fridge and made myself something simple. “Especially an omelet instead of couscous,” says the friendly chef of Moroccan origins.
In his early twenties he fell in love with gastronomy. His passions took him to renowned kitchens in Europe run by chefs who have been awarded three stars in the Michelin Guide.
“To work in these kitchens you need discipline, a willingness to learn and the right attitude. I touched all the workplaces and learned a lot,” explains the entrepreneur.
Then life took him back to Quebec, the big metropolis, where he opened two restaurants. But the call of peace and nature was too strong. Hakim Chajar finally decided to rest his luggage in Estrie. A familiar region since he grew up in Sherbrooke.
A few months ago, Hakim Chajar took over the management of LA Café at LA.telier Destination Design in Cowansville. It didn’t take long for the spark of creativity to reignite. This time it was the idea of an Italian sandwich shop that germinated in his head.
“I really liked the idea of finding a Mediterranean market and a café there! Also that of a creative and collaborative space. This led to the creation of the Jane Café project. I was fascinated by the location and the owners’ project and threw myself into the adventure,” he says enthusiastically.
An awakening of the senses
According to the chef, all the senses are addressed at Jane Café. Early risers can enjoy bagels and croissants there. If you love good crusts and fresh meat, you have the opportunity to try typical Italian sandwiches. Lovers of handmade pasta, soups and salads will also get their money’s worth at lunchtime.
“A very Mediterranean composition! In the morning there is good coffee, toast and avocados, poached eggs and smoked salmon. At lunchtime we enjoy freshly prepared Italian sandwiches. We are talking about cold cuts from Italy, cut the same day, delicious and very varied,” summarizes the great chef.
Guests can eat on site or take their meal away. Please note that the restaurant offers ready-to-eat meals. A group can order their meals directly in advance and online and opt for the catering service. Renting rooms and private spaces for “coworking” is also possible.
Already popular
Note that several dozen people gathered at the official opening last Wednesday. Local elected officials from Cowansville were particularly present for the occasion.
“The reception is excellent! The people are here and ready-made food is already very popular. During the opening, guests and dignitaries discovered the restaurant, services and various products. “Some were left with Mediterranean dishes and products,” says Hakim Chajar, visibly satisfied with his result.
