Already aware of the controversy that lists can generate even more so when they not only quote but classify Exame Magazine approached a jury of 60 critics and influencers in the gastronomic field for its first choice of the 100 best restaurants in Germany fluent Brazil.
Each guest named ten restaurants of their choice, in no particular order, and establishments that have survived the past two challenging years were recognized, in addition to those that have relied on the use of wellsourced ingredients and creativity.
Among the judges from Bahia are Lílian Brasileiro from @sopelasobremesa who is currently based in Chile; Linda Bezerra, EditorinChief of Correio newspaper; and the journalist Paula Theotonio, sommelier and wine columnist for the Correio newspaper.
The list includes addresses from ten Brazilian states, in addition to the federal district, including Bahian origin, by chefs Fabrício Lemos and Lisiane Arouca, at Caminho das Árvores, in an excellent 4th place, tied with Mocotó, by chef Rodrigo Oliveira, in Sao Paul.
Another of the duo’s restaurants, Ori, in Horto Florestal, also deserves a mention in the list, which also includes Dante and Kafe Bassi’s Manga Restaurante; Dona Mariquita, by chef Leila Carreiro; Beloved, by Edinho Engel; Carvão, by chef Ricardo Silva; the Chez Bernard; La Taperia, by chef Jose Morchon; Pasta em Casa, by chef Celso Vieira; Tereza’s House, by Tereza Paim; and Fasano Salvador, headed by chef Lomanto Oliveira.
In 1st place, with more points, was Chef Jefferson Rueda’s A Casa do Porco in São Paulo, followed by Oteque, holder of two Michelin stars, in 2nd place. In 3rd place was Maní by chef Helena Rizzo, a MasterChef judge.
Alex Atala’s DOM finished in 6th place, tied with Evvai, ahead of Chef Tuca Mezzomo’s Charco; a Michelinstar Lasai and Tanit by Catalan chef Oscar Bosch, all at No. 8.
Other “celebrity” chefs such as Claude Troigros, Erick Jacquin, Paola Carossela and Felipe Bronze had also mentioned their restaurants.
