Lobster season is finally here! Grilling is a great alternative to cooking lobster and is easier than you think. Live or pre-cooked, whole or shelled, there are many recipes for grilled lobster. Simply dipped in flavored butter, stuffed into homemade pasta, or rolled up, lobster impresses with its tender meat and unique flavor. Take advantage of the short season to fire up the grill and cook up delicious Quebec lobsters with ease. This recipe only takes a few minutes to prepare, but the flavors will surprise you. Good BBQ!

INGREDIENTS

4 1 1⁄2 pounds of lobster

2 lemons

2 files

Flavored Butter

1⁄2 cup butter

1⁄2 French shallot, chopped

2 garlic cloves, chopped

2 TBSP. parsley, finely chopped

1 c. chives, finely chopped

1⁄2 lemon in juice

1⁄2 lime in juice

1 C. Sriracha

1 C. Honey

salt and pepper to taste

PREPARATION

  • Preheat the grill to 400°F for direct cooking on high power.
  • Place all of the ingredients for the flavored butter in a small, grill-safe saucepan and set the saucepan to indirect cooking. If possible, place the grill in a corner of the grill where there is less heat. The goal is to melt the butter and mix in the other ingredients.
  • To cook a live lobster, use a chef’s knife to insert the tip of the knife into the top of the lobster just behind the head. Using one smooth, swift motion, slice the lobster in half lengthways.
  • It is possible to pre-cook the lobsters before halving them. To perform this method, simply submerge the lobsters in boiling water for 4 minutes. Then cut them in half and cook them indirectly on the grill for 5 minutes by following the steps below.
  • Place the lobster halves, meat side up, on the indirect grill. Brush the inside of the lobsters with the flavored butter and continue cooking for 10 minutes. Pre-cooked lobsters only take 5 minutes to cook.
  • Add the halved lemons and limes and broil them in the direct cooker for a few minutes.
  • Remove the lobsters from the grill, open the claws and brush one last time with the flavored butter. Serve with grilled lemons and limes to taste.
