Grilled pork chops with mustard, apples and candied shallots – Salut Bonjour

Servings: 4 – Preparation: 20 minutes – Cooking: approx. 15 minutes

Ingredients

  • 4 pork chops
  • 45 ml (3 tbsp) hot mustard
  • 30 ml (2 tbsp) soy sauce
  • 8 shallots, halved
  • 2 to 3 apples, peeled and cut into 8 pieces
  • 60 ml (4 tbsp) butter
  • 1 sprig of thyme
  • 2 cloves of garlic, minced
  • 125 ml (1/2 cup) apple cider or apple juice
  • 90 ml (6 tbsp) chives, chopped
  • Salt and pepper to taste

Preparation

Step 1

Preheat the oven (center rack) to 200°C (400°F).

Mix mustard and soy sauce in a bowl, brush over the pork chops and let marinate for a few minutes.

Meanwhile, in a hot pan, fry the shallots and apples in a little melted butter.

Step 4

Add the thyme sprig, garlic and apple cider and simmer over high heat for 4 to 5 minutes, covering the apples and shallots with the liquid. Check the seasonings.

Step 5

Then leave in the oven for 30 minutes, or until everything is golden brown and melted.

Step 6

Meanwhile, fry the chops in a very hot ribbed pan for 2 minutes on each side.

Step 7

Spread the apple-shallot mixture, the meat on the side and the chives on each plate.
