Among the various guests at the talent show was one of the best chefs in the world: Mauro Colagreco. An Argentinian of Italian origin – his grandparents came from Abruzzo – he is the manager of the renowned restaurant Mirazur in Menton, France, just over the border. Although he was received with full honors, his colleagues stumbled.

The sustainable chef

It is precisely his search for 0km materials, often grown in the gardens near his restaurants, that earned him the appointment of UNESCO Ambassador for Biodiversity. Not by chance. He says: “At Mirazur we pay close attention to the issue of food waste. The entire team has been working in this direction for several years: we fertilize the fields that feed us, we cultivate the garden using organic permaculture techniques, we work with a short supply chain of local producers and we use seasonal ingredients. […] We also work with our suppliers to Avoid using plastic“.

Mauro Colagreco He is the first chef in history to receive such recognition. And with that three Michelin stars and first place in the 2019 ranking of the 50 best restaurants in the world, a trip to my colleagues Cannavacciuolo, Cracco and it has served many others.
