Noma, a Copenhagen restaurant that has topped the list of the best in the world several times, will close its doors after two decades. With three Michelin stars, the establishment explores local ingredients and the natural world, and is currently serving grilled reindeer hearts on a pine bed.
René Redzepi, considered the most influential chef of his generation and creator of Noma, told the New York Times that by the end of 2024 the restaurant will no longer have regular operations where new dishes and products are created for Noma’s webshop.
Since its opening, the restaurant has always strived for innovation, with teams looking for new recipes, others specialized in fermentation, in addition to researchers, gardeners and collectors.
This whole journey resulted in Noma being considered the best in the world by the prestigious 50 best list in 2010, 2011, 2012 and 2014.
Though the restaurant will continue to operate under different terms, the news doesn’t please gastronomy fans, who pay US$500 just over R$2,600 at current prices per person for the multidish tasting menu.
