For this recipe you will need:
- A hand blender
- An airtight container
- A cooking thermometer
Ingredients for four people
- 200 grams of diced boiled potatoes
- 120 grams of boiled peas
- 120 grams of diced boiled carrots
- 120 grams of pickles, sliced
- 60 grams of pitted olives
- 1 tablespoon lemon juice
- salt to taste
- 1 sliced boiled egg
- peeled shrimp to taste
Ingredients for pasteurized mayonnaise
- 2 eggs
- 30 grams of white wine vinegar
- 3 grams of fine salt
- ground black pepper to taste
- 500 grams of sunflower seed oil
method
Boil the peas, carrots and potatoes in salted water. The potatoes should not be too soft. Drain and start composing our salad by adding the olives and pickles. Season to taste with lemon juice and a pinch of salt. We let everything cool down.
For the mayonnaise
Using the hand blender glass, add the lightly beaten eggs and the salt. Heat oil and vinegar in a saucepan over low heat. Once they have reached 70° (check with a thermometer otherwise it is enough to see that bubbles have formed), turn off the gas and slowly pour them into the jar while using the hand blender. At this point, our pasteurized mayonnaise is ready. Let’s take back our salad and pour the mayonnaise, mix and mix all the ingredients well. Now decorate with the prawns and small slices of hard-boiled egg, then leave the Russian salad in the fridge for at least two hours. Russian salad cannot be frozen because it contains mayonnaise, but it can be stored in the refrigerator for up to seven days.
