MICROWAVE EGGS

RUCKULA, CHEESE & DRIED TOMATO COOKER (GLUTEN FREE, VEGGIE)

  • 1 egg
  • A handful of baby arugula
  • 1⁄4 cup ricotta or cottage cheese
  • 1 C. tablespoon sun-dried tomatoes, chopped
  • salt and pepper to taste

AVOCADO, GREEN ONION & SALSA VERDE COCOTTE (GLUTEN FREE, LACTOSE FREE, VEGGIE)

  • 1 egg
  • 1⁄2 avocado, quartered
  • 1 C. tablespoon green onions, chopped
  • 1 C Salsa Verde
  • salt and pepper to taste

Smoked salmon, caper and maple syrup coconut (GLUTEN FREE, LACTOSE FREE)

  • 1 egg
  • 2 slices smoked salmon (or dill gravlax)
  • 1 C maple syrup
  • 1 C. Capers
  • salt and pepper to taste

PREPARATION

  • In a mug, combine all the ingredients for your casserole dish of choice.
  • Cook in the microwave for 2 to 3 minutes (depending on power).
  • MAPLE CUPCAKE IN A MUG (IN MICROWAVE OVEN)

    INGREDIENTS

    • 1 c butter
    • 2 TBSP. maple syrup
    • 1 C. Yoghurt
    • 1 egg
    • 1⁄4 cup all-purpose flour
    • 1⁄2 tsp. baking powder
    • A pinch of salt
    • powdered sugar for serving

    PREPARATION

  • Put the butter in a mug and melt it in the microwave.
  • Add the maple syrup and mix well with a fork.
  • Add the yoghurt and egg and stir again.
  • Add flour, baking powder and salt and stir until smooth.
  • Microwave for 2 minutes, then allow to cool for a few minutes.
  • Sprinkle with powdered sugar to serve.
